Perfect Edge Cutlery Dragon Fire 220mm (8.5″) Gyuto

Every Dragon knife is crafted with a specific purpose to suit the needs of the modern American kitchen. The habits and preferences of home cooks and professional chefs alike, played a role in shaping each blade, ultimately, to produce tools thatperformbetter and last longer.

The Fire series is particularly unique to Dragon. The blade-shape design is curated from Japanese knife-making traditions; thinner blades, for example, offer more precise and exacting cuts. Couple that with Dragon's standard components, such as BD1N nitrogen steel, the fine-grained metal with 63 HRC Rockwell hardness delivers a razor-sharp blade with superior edge retention.

Blade

CTS-BD1N nitrogen-infused stainlesssteel

HRC

63

Bevel (Angle Ratio)

Double (50:50)

Handle

Red Micarta
